Crunch Crounch Grumpf [granola]


Je n'avais jamais été attirée par le granola. Non c'est vrai, j'avais l'impression que c'était juste un mix de céréales revendiqué par les écolos pour nous faire avaler pleins de fibres en masquant le tout par plein de sucre.
Et puis au petit dèj' les tartines c'est sacré, je ne les troquerais pour rien au monde, surtout pas pour du granola.
Puis je suis tombée sur une recette, et là j'ai découvert les joies du fromage blanc au granola.
Au chocolat, le granola.

En fait si j'ai dénigré le granola jusqu'à maintenant, c'est parce que je connaissais le muesli, j'ai eu une période, et ç'est passé. Alors je me suis dit le granola c'est la même chose - et puis honnêtement je ne voyais pas l'intérêt de "faire" son granola, vu que pour moi il suffisait de mettre ensemble des graines achetées par paquets de 500g dont on ne sait plus quoi faire quand on en a utilisé 1/18. D'ailleurs j'ai encore du mal à voir la différence entre granola et muesli.
Voyons voir :
- Muesli : mélange de flocons de céréales et de fruits secs originaire de Suisse alémanique.
- Granola : mélange d'avoine, d'amande et de miel apparenté au muesli.

Ah ! Il me semblait bien que c'était pareil. Bon c'est pas pareil, c'est cousin.

Le muesli se distingue aussi parce qu'il ne serait ni cuit ni sucré. Et c'est là toute la différence.
Le muesli ne se "prépare pas", il est déjà fait puisque il suffit d'ajouter ensemble des ingrédients, comme une salade, alors que le granola se cuit et se fait en suivant une recette précise.

Bah quand même, j'étais pas loin.
Mais cessons les clichés : quand j'ai vu l'article de Pétrin (le blog) sur le "granola magique tout chocolat" je me suis dit pourquoi pas. Après tout les écolos mangent aussi de très bonnes choses, pas forcément juste parce que c'est sain..

Au final, le granola me fait penser à mes céréales de quand j'étais petite, en plus sticky [collant] parce qu'il y a des raisins et des cranberries secs, quoiqu'il est assez crunchy aussi, et gourmand - d'où le titre de ce post (oui, j'étais inspirée).

Je déclare donc officiellement le granola testé et approuvé.




 Pour la recette, c'est par ici.
J'ai modifiée un peu les proportions pour faire à ma sauce (on a tous nos préférences), j'ai utilisé :
- 280g flocons avoine
- 60g de cranberries séchées
- 30g de raisins secs
- 45g d'amande entières
- 15g de cacao en poudre
- 1 grosse pincée de sel fin
- 50g de sucre de canne
- 2 sachets de sucre vanillé
- 60g d'eau
- 20g d'huile de sésame
- 70g de miel
- 1 gousse de vanille
- 50g de chocolat

Ça vous donne pas déjà envie là ?


Note : cette recette vient du blog Pétrin, elle est la version modifiée de celle de Citrus and Candy, qui a adapté la recette de Nigella Lawson, ici.
Seriez vous surpris si je vous disais que cette recette n'a rien à voir avec celle d'origine ? C'est un peu le téléphone arabe.

Vous savez les sacs de 500g de graines dont on ne sait plus quoi faire que j'ai mentionné plus haut ?

 I had never been attracted by granola. No I mean, it seemed like a mix of cereals claimed by green people to make us eat more fiber but with lots of sugar to hide the taste.
Besides at breakfast, you can't compete with tartines [toasts] I wouldn't swap them for anything on earth, certainly not for granola.
But then I discovered the joy of fromage blanc for dessert, with granola (closest thing is greek yogurt for you poor guys seriously you don't have fromage blanc ?).
Did I mention the chocolate ? Cause that's a chocolate granola.

Well if I denigrated granola until now, it's because I knew muesli, I had a muesli period, then god knows why it disappeard. So I told myself granola is the same - and honestly I didn't see the point in making "your own" granola because for me you just had to throw a bunch of wholegrains together, that are usually sold in bags of 500g and then you end up with things you have no idea what to do with. Speaking of which, I'm still not sure of what is the difference between muesli and granola.
Let's see :
- Muesli : mix of cereals flakes and dried fruits from german-speaking Switzerland
- Granola : mix of oats, almonds and honey close to muesli

Ah ! I was right, it's kind of the same. Well it's not the same, it's close - like a cousin.
But muesli is not bake or sweetened either. Which makes all the difference actually. Muesli doesn't need to be "made", meaning that it is already done since you just need to put ingredients together, like a salad, whereas granola is baked and cooked following a precise recipe.

Well, I wasn't far from it.
But let's give up all those cliché : when I read the article from le Pétrin (blog) about "magic chocolate granola" I told myself why not. After all Greens eat good stuff too, it's not always because it's healthy..

In conclusion, granola reminds me of my old childhood bowl of cereals, only more sticky because of raisins and dried cranberries, and crunchy, and gourmand - hence the title of this post (yes, I was inspired).

I now declare granola tested and approuved.


Recipe is from here, I slightly changed the proportions to make it my way (we all have our preferences). 

For 1 big or 2 medium jars :
Print Recipe

- 280g oats
- 60g dried cranberries
- 30g de raisins
- 45g whole almond
- 15g cocoa powder
- 1 pinch of salt
- 50g brown sugar
- 2 pack of vanilla sugar
- 60g water
- 20g sesame oil
- 70g honey
- 1 vanilla pod
- 50g dark chocolate

Preheat the oven to 180°C and line a baking dish with parchment paper.
Soak raisins and cranberries for 20 minutes in hot water, to keep them soft when baking.
Combine oats, raisins, cranberries, cocoa, almonds, and salt in a bowl until the cocoa coats all the ingredients.
In a saucepan add brown sugar, vanilla sugar and water and heat to a boil, stirring, until sugar is dissolved.
When it's ready, add in oil, honey, and scraped vanilla seeds and stir until the honey is liquid and the mixture is homogene.
Chop chocolate with a knife and, off the heat, add it to the pot. Mix until melted and homogene.
Add this mixture to the dry ingredients and toss until chocolate coats everything, you may want to put your hands in it.

Spread the preparation over the baking tin in a single layer (you may need to make two trays), braking the "crumbs" or not (do you like clusters ?) then bake for 20 to 25 minutes.

Take off the oven, mixture could be still soft, but it will harden while cooling.
Let it cool completly then stock in glass jars.

Would you be surprised if I told you that the recipe above is completely different from the original one ? It kinda like Chinese Whispers.

Tout comme toi, je voyais le granola comme quelque chose estampillé "colos", "bobos" et j'en passe.
Tout comme le quinoa^^Jusqu'à ce que je goûte et que je me renseigne.

Je n'ai encore jamais eu l'occasion de manger du granola, mais ton article fait envie. Et j'aime bien le mélange de textures et de saveurs qu'il propose.
J'ai aussi ri car je ne savais pas pour les personnes surnommées "granola"^^c'est mignon
