Epluchez les courgettes, taillez les en rondelles pas trop trop fines, et faites les sauter dans une poêle avec du sel, du poivre, et du jus de citron.

Buckwheat crepes, and the taste of those little seeds called buckwheat, is so particular... I love it.
I tend to replace ordinary crepes by buckwheat pancakes quite often, but I don't buy them : they're homemade.
It's not that the supermarket ones aren't good as well, it's just that I don't have the idea to buy them whereas I always have a pack of flour in my kitchen cupboard.
Beside, it's so easy to make ! You don't have to worry about lumps in the batter because in buckwheat flour there's no gluten, so the batter is smooth and you can wisk it you won't get any lumps. And, other good point, the batter doesn't need to rest...
